Artichoke & Feta Pasta
I want to give a shout out to Tik Tok for the inspiration of this pasta dish. It takes minimal skills, makes next to no mess (hello easy clean up!) and is super freaking DELICIOUS!
The traditional Tik Tok variation is made with cherry tomatoes, olive oil, feta and garlic. Now I love keeping things simple and fresh, but this meal felt like it was hardy enough to take on some extra veg. After testing out several different variations I finally landed on this veggie packed combo.
This is a dump it and shove it in the oven to forget about it for a few type of recipe which is why I love it. If you have little to no patience for cooking or you simply don’t have time to be making gourmet meals. This simple meal will have you feeling like you are eating gourmet when it only took you moments to throw together.
Ingredients
1lb pasta - about 1 box or 4 servings of pasta
3 tbsp olive oil
2 tsp dried basil
3 Garlic, cloves, minced
1 1/2 cups cherry tomatoes, you can slice them if you want
1/2 cup marinated artichokes, removed from oil and chopped
2 cups spinach, packed
1 block (8oz) feta
1 white onion, diced
Salt & Pepper, to taste

Preheat oven to 400F.
In a large casserole dish place block of feta in the middle and then surround the feta with tomatoes, feta, onion, garlic and spinach. Pour the 3 tbsp of olive oil over the veg and give it a quick toss with your hands or two spoons. Sprinkle dried basil, salt and pepper over everything.
Place the dish into the preheated oven and cook for 35-40 minutes. Until the tomatoes are beginning to burst and the feta is looking toasty.
While the feta and vegetables are baking. Cook your chosen pasta according to the package instructions, normally about 8-10 minutes. Penne works really great, but anything with little grooves will work.
Once pasta is cooked reserve 1/2 cup of pasta water before draining, you may need it to help to help smooth out the texture of the feta bake and help it stick to your noodles.
Once the feta dish is done cooking remove from the oven and carefully mash together the feta, tomatoes and other veggies. Add a couple of tbsp of pasta water to help thin out the “sauce”, you want it to be thick but not dry, you likely won’t need the whole 1/2 cup but better safe than sorry.
Add in your noodles, mix it around until the pasta is fully coated. Serve and enjoy.
