Mini Oven Baked Pancakes

If I had to pick one meal that felt like a must when it comes to meal prep it would be breakfast. And these high protein mini pancakes are a tasty fun way to start your day.

I original came up with this recipe for my little one, but they have turned into a quick and easy breakfast for the rest of the family.

So, if you’ve been struggling to find a way to start your day with protein or you just prefer to start your day on the sweet side these little pancake/muffin or puffins(?) are a great choice.

Ingredients

  • 300g Greek yogurt

  • 1 egg

  • 1 tsp vanilla

  • 1 cup milk

  • 140g flour (about 1 cup)

  • 1/2 tsp baking powder

  • Fresh berries, as much as your heart desires

Directions

  1. Preheat oven to 375F

  2. Grease a mini muffin tray with butter or spray with your fav oil. Set aside for later.

  3. Mix together yogurt, eggs, milk and vanilla. In a separate small bow combine flour and baking powder.

  4. Mix wet and dry ingredients together and pour pancake batter into pre-greased muffin tins. Top with berries.

  5. Place in oven and bake for 20-25 minutes.

    Notes:

    • Makes approximately 24 mini pancakes or you can make one large sheet pan if you choose to go the sheet pan route I strongly recommend lining your pan with parchment paper.

    • Will keep in an airtight container for up to 5 days in your fridge.

    • If freezing for later freeze on a flat surface for 30-40minutes than place in a container or bag to avoid them freezing into a clump.
