Cheeseburger Salad
I’m in full on meal prep mode, and for me that means things that are super delicious, easy and I wouldn’t mind eating for at least 2 meals.
Although, salad isn’t traditionally something I would go for this salad might have converted me into a salad lover! It was great the first, second and third day of eating it, so I am so excited to share the recipe with you!
When you are looking for something that is a bit lighter but scratches the itch of having a burger this salad has your back. I can’t wait for you to try it.
Ingredients
The Salad:
225g Extra Lean Ground Beef
4 cups Romain lettuce or Iceberg (chopped)
1 cup Carrot (large, shredded)
1/2 cup Pickles (finely diced)
1/4 cup Sweet Onion (finely diced)
1/2 cup Old Cheddar (shredded)
Dressing:
1/3 cup Mayo
1 tbsp Ketchup
1 tsp Vinegar
directions
Cook ground beef in large skillet until cooked through. Season with salt and pepper, set aside to cool slightly.
While beef is cooling prep the other salad ingredients. Divide all ingredients evenly between two bowls.
In a small bowl, combine mayo, ketchup, vinegar and whisk until well combined.
Dress salad right before you’re ready to eat. Enjoy!
Notes: This recipe makes 2 large salads.
Storage: Keep dressing separate if you are prepping this for later on and allow beef to cool completely before adding it to the salads.
Time Saver: To save time purchase pre-shredded carrots.
