Creamy Sweet Potato Soup
I am not a huge soup fan, but something about mixing sweet potato with cinnamon in the fall just gets me. It feels like you're wearing a warm and cozy blanket without having to layer up. So, instead of just putting on those PJs, snuggling up under a blanket and not leaving the house for five months, try this soup to keep you warm.
Ingredients
2 sweet potatoes, cut into 1-inch chunks
3 cups water or bone broth
1 cup full-fat coconut milk, from a can
2 tbsp grated ginger
Pinch of cinnamon
Salt and pepper to taste
Directions
Put all ingredients into a large soup pot and bring to a roaring boil.
After about 5 minutes, turn the temperature down to simmer. Let your soup simmer for 20 minutes.
Once you can poke through the sweet potato easily with a fork, remove it from heat.
Using a submersion blender, blend soup until smooth.
Serve hot. This soup goes great with some spiralized zucchini on top, just like in the picture below.
